Botrytis cinerea in its benevolent form is a fungus responsible for noble rot. The fungus encourages the evaporation of juice and fruit concentration within the grape, influencing both aroma and taste. Noble rot occurs regularly in climatically favoured winegrowing regions, such as Burgenland.
